The foodproof Spoilage Yeast Detection 2 LyoKit is a real-time PCR assay for detecting four major beverage spoilage yeasts: Saccharomyces cerevisiae var. diastaticus, Wickerhamomyces anomalus, Kazachstania exigua, and Schizosaccharomyces pombe. This lyophilized PCR kit enables sensitive detection down to 10² CFU/mL from enrichment cultures in beer, wine, juices, and non-alcoholic beverages.
